咖啡豆處理法(日曬法、洗水法、半洗水法) #咖啡豆處理法 #日曬法 #洗水法 #半洗水法   在一杯咖啡能擺上我們的桌上前,往往需要使用不同的步驟去帶出該杯咖啡的味道。而往往當中不同程序的使用方法,均會影響到咖啡本身的風味。例如使用不同的方法去處理咖啡生豆、使用不同的水温去沖泡咖啡豆以至能否篩選出不成熟的咖啡豆。今天這個部落格則會集中於討論不同的咖啡豆處理法會怎樣影響到一杯咖啡的風味。   甜度:日曬法>蜜處理法>半洗水法>水洗法 酸度:水洗法>半水洗法>蜜處理法>日曬法 日曬法和洗水法   普遍程度: 視地區的氣候及資源而定,乾燥有太陽地區->日曬法(最古老),多雨水地區->洗水法     氣候因素: 如上述所提及,乾燥地區如非洲的埃塞俄比亞、巴西及印尼部份日光充足而雨量比較少的地方(至少在收成季節時);而相對的,瓜地馬拉、哥倫比亞、藍山、科納、肯亞、爪哇和巴拿馬等咖啡則較為多雨及濕潤。   口味: 日曬法因為陽光及乾燥度的難以把握,所以風味變化更多,層次以及甜都更明顯。同時相較於日曬法,洗水法則因為處理手法的劃一,所以果實被處理時的影響因素較少,風味的的豐富度及變化則較少。不過事實上兩種處理法都有使用到水去清洗、篩選以及各種方法去乾燥果實,只是日曬法只容許較短的時間果實在水中,而且會原粒咖啡豆日曬;水洗法就會先將果實去除果肉,放在水裏16-36小時,並定時攪動,讓果膠也慢慢在種子上分離,最終也會使用日光或其他方法乾燥果實。而水洗法這種做法則會讓發酵過程製造更多如檸檬酸、蘋果酸及醋酸等的酸性物質,所以水洗法的咖啡豆風味便會更加偏酸。   半水洗法(果日半曬法/蜜處理法):   半水洗故名思義就是只有一半的工序會使用水洗來提取咖啡豆,而另一半的工序則是使用日曬,並在中間加入一些其他的步驟。農民會先以水除掉雜質、果皮、果肉,並選出浮在水面的劣果,再用十天以上的時間去進行日曬處。在一開始日曬的三、四天還需要到每小時翻動一次。因此味道便介乎於日曬及水洗中間,不會如水洗豆酸,亦沒有日曬豆的甜度。   而蜜處理法則是在半洗水法的基礎上的變化版。由哥斯達黎加的咖啡農民帶起的咖啡豆處理法,同樣好像上述先以洗水去除雜質以及劣果。然而,密處理法卻不會去掉果膠,以果膠進行發酵。之所以會叫蜜處理則正正因為留在咖啡豆的果膠,黏黏的,像蜂蜜一樣。留下不同比例的果膠,區分出四種不同的名稱:白蜜(10%左右)、黃蜜(25%)、紅蜜(50%)、黑蜜(100%)。   細味公平咖啡豆的處理法: 細味公平的咖啡豆均主要來自四大洲:非洲(剛果北基伍、盧旺達、埃塞俄比亞斯丹摩、埃塞俄比亞耶加雪夫)、中南美洲(秘魯、危地馬拉、尼加拉瓜、洪都拉斯)、大洋洲(巴布亞新畿內亞)以及亞洲(印尼卡瑤)。所有咖啡豆的處理過程除了包裝及烘焙之外都是在原產地進行。而除了印尼卡瑤使用半水洗法之外,其餘咖啡豆都使用水洗法去處理咖啡豆果實。   Coffee Processing (Natural Coffee Processing, Washed Coffee Processing & Semi-Washed Coffee Processing) Before a cup of coffee can be put on our desk, there are numbers of procedure to be done in order to bring out the taste of that cup of coffe. Affecting elements include the way the coffee bean are being processed,  different temperature of water to brew the coffee and the matureness of the coffee bean. Today episode will be focusing on the different effects on different ways processing the coffee bean. Sweetness: Natural > Honey > Semi-Washed > Washed Acidness: Washed > Semi-washed > Honey > Natural     Natural Coffee Processing & Washed Coffee Processing Popularity: Depends on the climate and local resources, dry and sunny places-> Natural Coffee Processing, Rainy places-> Washed Coffee Processing.   Climate Factor: As mentioned, dry districts such as Ethiopia, Brazil as well as part of Indonesia ; comparatively, climate of origins such as Guatemala, Colombia , Blue Mountain, Cona, Kenya, Jawa and Panama, are humid and rainy.   Taste: Because of the difficulty to control the temperature and the dryness, the coffee beans under Natural Coffee Processing, the tasing could be more layer and sweet. However, relatively, Washed Coffee Processing is more standardized and so the affecting factor is fewer. In fact, it is not to say that Natural Coffee Processing does not use water and Washed Coffee Processing does not use the sunlight to dry the coffee bean. Both Coffee Processing used water and sunlight and different drying methods to process the coffee bean. Only Natural Coffee Processing shorter time for the coffee bean to stay in the water and sundry the coffee bean without removing any outer pulp or mucilage; Washed Coffee Processing will use water to remove the pulp and then keep the bean in the water for another 16-36 hours, the mucilage will be separated from the bean, and eventually use the sunlight or any other drying method to dry the bean. Since staying in the water longer, acids, such as acetic, lactic as well as butyric, etc, are being conducted, therefore, tasting of the coffee bean by washed coffee processing is more acid.     Semi-Washed Coffee Processing/ Honey Coffee Processing As in its semantic sense, Semi-Washed Coffee Processing used both technique of Natural Coffee Processing and Washed Coffee Processing. The Farmers will first select the poor bean by sinking bean in the water and in the meanwhile wash them. Another ten days of sun-drying will be needed. In the first three to four days of sun-drying, it takes the farmers a lot of efforts in a sense that they will have to keep flapping the beans every several hours. Since it used both technique as well as procedure of Washed Coffee Processing and Natural Coffee Processing, the taste is remained between the flavor that produced on the above two tastes.   For the Honey Natural Coffee Processing, it is an advanced improving version of Semi-Washed Coffee Processing. Originated from Brazil, the farmers also use water and sun-drying to handle the bean. However, when it comes to the sun-drying part, the farmers will not remove the pulp and instead allow it stick to the bean while the sun-drying. That will make the flavor of the bean sweeter. There are four different types of White Honey (10%), Yellow Honey (25%), Red Honey (50%) and also Black Honey (100%).   FAIRTASTE’s Coffee Bean Processing FAIRTASTE’s coffee bean comes from four different continents : Africa (Congo North Kivu, Rwanda, Ethiopia Yirgacheffe, Ethiopia Sidamo), Middle and South America (Peru, Guatemala, Nicaragua, Honduras), Oceania the continent (New Papua Guinea) and Asia (Indonesia’s Gayo). All FAIRTASTE’s coffee bean processing take place at the origin, except the procedure of packaging and roasting. Only coffee bean from Indonesia’s Gayo use the Semi-Washed Coffee Processing, the rest of the origin use the Full Washed Coffee Processing.

【巴布亞新畿內亞咖啡豆農民的困境及為何需要公平貿易 PNG COFFEE BEAN FARMER’s STRUGGLES AND THE NEED FOR FAIR TRADE】

#公平貿易 #巴布亞新畿內亞 #咖啡豆 中文俗語常說搖錢樹、搖錢樹,你知道在巴布亞新畿內亞人的心目中,他們的搖錢樹是甚麼形象嗎?答案就是長得像咖啡樹一樣。 巴布亞新畿內亞的咖啡豆產業雖然只佔全球生產鏈的百分之一,只有大概巴國的整個國民產值百份之十左右,但卻有近巴國一半的人口(i.e.250萬人以上)以種植咖啡豆為生。因此當地的農民甚至有句俗語稱咖啡豆樹(i.e. Coffee tree)為搖錢樹(i.e. Money Tree)。 至19世紀後期開始,巴國開始被英國及德國殖民。而大概在20世紀早期,咖啡豆開始從其他地區被引入進巴國,其品種為牙買加的藍山阿拉伯咖啡豆。 因為巴國的天然資源十分豐富,因而在受其殖民政府的統治下,主要為出口天然資源及農業產品為主。其影響之深,直至今天,仍然以天然資源及農產品的出品為主。巴國的種植林園因為主要在內陸地區,而且咖啡豆農民均是以小戶為主,因此出現以下的幾個困境:   以小戶為主的生產模式,讓得咖啡小農們很難向推銷自己的產品。 因為小農均是以小戶的形式與外商談判,因此很難有同等的談判權與大型外商談判 。 因為巴國咖啡小農們均是長居於內陸之中,再加上巴國的低互聯網普及率(i.e.只有約20%),使得小農們對世界及市場消息並完全不了解,便加劇了咖啡小農們在以上兩個困境的問題。   公平貿易理念,大家固然可以到細味公平的網站及WFTO(World Fair Trade Organization),但簡單而言公平貿易對巴國的小農之協助還是存在的。其最實際的幫助當然就是作為中間人,協助小農們與有心的外商合作,條件固然要結予小農們最低的基本合理價錢,亦會提供背後如種植及顧問的服務、協助基建等等。更深一層就是能夠透過這些手段去提升邊緣農民的聲音,並就此建立出一個以平等為基礎的共同管理市場架構(democratic governance structures)。         Do you know that there is around half of the population in Papua New Guinea (i.e. over 2.5 million people) livelihood relying on the coffee bean industry? Despite the fact that the export of coffee bean in Papua New Guinea only contributed 10% or less in the PNG national income, it still feed the month of a lot of PNG farmers. As a result, farmers in PNG will usually call “Coffee Tree” as “Money Tree”. In fact, the colonial history of PNG has not been started until the late of 19th century. Its northern part is being controlled by the Germany Empire and the southern part ruled by the British Empire. Thought there is a long history of agriculture in PNG, coffee bean is brought to PNG not until the early of the 20th century. The type of the coffee bean in PNG come from Jamaica, Blue Mountain Arabica. Since the natural resources in PNG is very rich, its colonist has mainly used PNG as exporting different raw materials, such as Palm oil, rubber, oil. Besides, foods are also what the colonist needs, so they designed PNG as a farmland to grow foods for them. Therefore, until now, PNG is still depending on export of natural resources as well as agricultural products as its main income. However, there are number of problems that small-scale farmers in PNG facing in the market globalization. They come as follow: Coffee bean farmers are usually in small-scale, which means that they lack of resources to sell and promote their products. Since coffee bean farmers are in small-scale production, leading to their small bargaining power against the foreign big company. Given the fact that coffee bean farmers are usually living in the mainland, plus, it is not common for PNGers to access internet, small farmers are not exposed to the updated local and global news, the low information exposure has seriously damaged the interests of small coffee bean farmers in PNG.    More information can be found in FAIRTASTE and World Fair Trade Organization. Still, the idea of Fair Trade, which has already in progress of different area in globe, has helped the PNG farmer businesses and facilitated local farming cooperatives to build thriving communities. In general, three goals are waiting to be completed. World Environment Day originated in June 1972 as a day established by the United Nations General Assembly to commemorate the first environmental conference held in Stockholm, and the first World Environment Day was held in 1974. The theme of this year's World Environment Day is "Only one Earth," a call to action for collective change to honor, protect and restore our planet. Because there is only one Earth, we must take care of it. The planet is facing three global emergencies: a climate that is warming too fast for humans and nature to adapt; habitat loss and other pressures that threaten to wipe out an estimated one million species; and pollution that continues to poison our air, land and water. To keep global warming below 1.5°C in this century, we must cut annual greenhouse gas emissions in half by 2030. If no action is taken, the number of people exposed to air pollution that exceeds safety standards will increase by 50 percent within a decade, and the amount of waste plastic flowing into aquatic ecosystems will nearly triple by 2040. Global warming is causing natural disasters, glacial melting, tsunamis and typhoon formation. You think it's none of your business? I believe that every Hong Kong resident has felt the damage caused by the annual rise in temperature and typhoons. 【活動回顧 Event Review】2022 Fair Trade Fiesta

一連兩日的公平貿易節於上星期日(15/5)完滿結束,再次感謝香港公平貿易聯盟 Fair Trade Hong Kong的邀請。是次的公平貿易節連同公平企業賞頒獎禮一併於愉景新城D.Park舉行,現場設有不同的工作坊、展覽和市集,場面盛大。主辦方更邀請了Pomato 小薯茄阿J和朱Mic擔任嘉賓,為現場注入年輕又活力的新興元素。 活動上用可愛搞鬼的粗眉卡通人物以輕鬆有趣的互動式展覽向大眾介紹「什麼是公平貿易?」,小朋友收到粗眉香蕉貼紙都話「原來蕉都有公平?」 今年,我們很榮幸和嘉里建設、香記咖啡等公司一同獲頒發「公平企業賞金賞」,這個獎項意義非常,是一份肯定與認可,讓我們更有自信和勇氣地繼續向前。 而今次市集是我們時隔大半年的第一個公開活動,聽到很多客人專程走來支持我們,的確令我們感動萬分。每次出席公開活動,我們都希望為大家帶來新驚喜,例如不同的現場優惠或新產品,所以今次也不例外,搶先為大家帶來一個澳洲品牌Sttoke不碎陶瓷杯。STTOKE杯因應人體工學設計,外觀簡約時尚,陶瓷內層不食味,保溫3小時,質感細致。而個人化定制服務亦只適用於那兩天於現場訂購的客人。不知道你們對個人化訂製還感興趣嗎? 如果有,我們大概會考慮重新推出喔! 這兩天的時間真的過得很快,期望很快又可與大家再次見面。        The two-day Fair Trade Festival ended last Sunday (15/5), thanks again to Fair Trade Hong Kong's invitation. The Fair Trade Festival was held in conjunction with the Fair Trade Award Presentation Ceremony at D.Park, and featured a variety of workshops, exhibitions and a bazaar. The organisers also invited J and Mic Zhu from Pomato to be the guests of honour, bringing a young and energetic element to the event. The event introduced the public to "What is Fair Trade?" through a fun and interactive exhibition with cute and funny cartoon characters with furry eyebrows. The children received the banana stickers and said, "So there's a fair trade for bananas? This year, we were honoured to be awarded the "Fair Trade Award" together with Kerry Properties and Heung Kee Coffee. This is a very meaningful award, a recognition and acknowledgement that gives us the confidence and courage to move forward. This was our first public event after more than half a year, and we were really touched to hear that many of our customers had come to support us. We are always looking to bring new surprises to every public event, such as different on-site offers or new products, so this time was no exception, as we were the first to bring you an Australian brand Sttoke unbreakable ceramic mug, which is ergonomically designed with a simple and stylish look and a non-tasteful ceramic lining that keeps warm for 3 hours. 2022年5月6日的那一天,我們成功招攬了一位負責門面擔當的員工(即係代言人)。   隆重為大家介紹 — 阿細,英文名Little,牠是一隻既享受生活又勤奮非常的樹懶。性格方面較為急躁,會希望盡快完成手頭上的事情,如果被人阻斷會開始暴走。不過不用擔心,牠最近正在努力訓練自己的忍耐力。   阿細的語速非常快,行動力驚人,但速度就…大家知道就好,不竟牠仍然是一隻樹懶。阿細經常掛在咀邊的一句話就是「生活就是共享知識!」,分享自己的見解見聞是牠的生活樂事,牠希望其他人可以了解更多未知的事,豐富自己的人生。有時也會因為說得興起,而忘記自己已經獨自說了兩多個小時。怎都好,望大家手下留情,給點耐性聽完(又或者默默離開) 就好了!   喔喔喔…聽說阿細的目標是成為樹懶界的KOL,大家祝福牠成功吧!   On 6 May 2022, we successfully recruited a staff (or a Brand Ambassador).
